We had Gyeongbokgung Palace and the Insa-dong area high up on our lists after doing a little history research on the city. Built in 1395, Gyeongbokgung was the main royal palace of the Joseon Dynasty. It's been restored multiple times since then and its traditional Korean architecture has delightfully been preserved.
